Poblano Pesto Macaroni and Cheese

This Saturday, Mr. Natural here in Austin will be hosting a holistic fair and vegetarian cookoff challenge. I thought it fair to enter when I found out the top three entries will recieve $300, $200, and $100 respectively. That, and I’m the sixth entry ;) The odds are good. Restaurant Review

It may look like I’ve been slacking on the recipe publishing (and I have), however I have a good excuse. I’ve been reading a book called the China Study by T. Colin Campbell. It’s title “The China Study: The Most Comprehensive Study of Nutrition Ever Conducted and the Startling Implications for Diet, Weight Loss and Long-term Health” suggests only a portion of the content and research of the book. Farmer’s Market

Many people have a farmer’s marketing close to them. It’s surprising how few of us actually visit. Short of having a farm or a square foot garden, this is some of the finest local offerings you’ll find. It’s still early in the season, but spring vegetables and artistic purveyors are out in force. Warm Vegetable Salad

It’s been cold here in Texas over the past two days and I’ve been eating a lot of soup. I was craving something more hearty so I put together a simple plate of roasted vegetables. It is a mix of beautiful butternut squash, small red potatoes, four different beans, and hard tofu. This dish is pan roasted and sauteed all in the same skillet and then family style plated for a quick and simple hearty dinner. Panko Tofu with Dal and Basmati Rice

The New Year brings with it resolutions that are often short lived. Oftentimes we barely make it to the first weekend before we cave in. One of my favorite quotes (or a derivation of it) is “stupidity is repeating the same behavior over and over expecting a different end result”. Hopefully, we can recognized what hasn’t been working and try something a new and different way to create change. Somehow, I keep coming back to tofu. Heart health and nutrition

After my heart attack, I was sent home; without any guidance whatsoever on what to do other than lose weight and exercise. Wow! Is it that simple, really? If I would have done that before, I wouldn’t of had a heart attack, right? According to my cardiologist, not really. His experience shows that food has a much smaller percentage to do with heart health than does genetics.
