Squash Souffle Recipe

This was the big hit of the Thanksgiving meal so I thought I’d share it. It’s a joke with my family about how often I cook with different varietals of squash so it was a surprise to me that this is the dish they raved about the most. (This implies they will get squash more often now that I know). The souffle batter can be made ahead of dinner and popped in the oven about 30 minutes before you are ready to eat. ...continue reading about Squash Souffle Recipe...
Brian’s Oatmeal Cookie Recipe

About a month ago, one of the guys that I work with comes and talks to me about making bread. Now Brian isn’t the type of guy that seems like a baker. Actually, now that I think about it, what does a baker look like? Am I so scared of pastry chefs that I’m attempting to profile them so I can see them coming and hide before they ambush me with measuring cups and electronic scales? I digress. ...continue reading about Brian's Oatmeal Cookie Recipe...
Kale Pesto Gnocchi Recipe

I’m not always the healthiest eater in the world. Really. Brian Bopp brought in the best oatmeal chocolate chip cookies yesterday and I can’t really remember having a more awesome cookie. I promise I’ll get that recipe from him and post it here. Then I’m on the way home and I thought I have to do something better tonight. ...continue reading about Kale Pesto Gnocchi Recipe...
Sweet Potato and Chipotle Goat Cheese Ravioli Recipe

I was talking with Rick the other day and he was going on and on about these amazing sweet potato ravioli he had at a restaurant here in Austin and how his wife waits for them to come on the menu. Come on, man. WAIT for a restaurant to put them on the menu? You will wait no more. These are the easiest little things to make and filled with amazing flavors that not only go together well, but are a great fit for the holidays. ...continue reading about Sweet Potato and Chipotle Goat Cheese Ravioli Recipe...
Vegetable Lasagna Recipe

When I was growing up and catering with my Mom, she scored a gig cooking with an Italian American club in South Florida. When she started, she didn’t know the first thing about Italian cooking. She had catered some dinner with a group of Sicilian’s and impressed them somehow. I don’t even remember what she made. Once she started cooking for this club, several Sicilian women, mostly older women with strong Italian accents helped her learn Sicilian cooking. ...continue reading about Vegetable Lasagna Recipe...
Sauteed Turkey Breast and Cranberry Dressing Recipe

So, I had you brine those turkey breasts the other day and I hope you did. Turkey prepared in this way doesn’t need any extra seasoning at all. It has the right mix of salty, spicy, and sweet all in one simple to cook, protein packet bundle that reheats very well while retaining its moisture. And what would turkey be without cranberry sauce. If your family needs cranberry sauce with rings built in from a can like mine does, please cook this as well. ...continue reading about Sauteed Turkey Breast and Cranberry Dressing Recipe...
How to Brine a Turkey Breast (and why)

I’ve shown this method to a bunch of folks and they look at me like I just managed to create a dove out of mid-air or levitate an elephant. Somehow, as simple as it sounds and is, I have to explain it over and over like I’m secretly hiding the real method and that it can’t be this easy. I swear to you, there is no secret. There is no man behind any curtain. There is no magic. ...continue reading about How to Brine a Turkey Breast (and why)...
Blender Baked Sweet Potato and Leek Soup Recipe

You probably think I’ve gone nuts on the blender soup thing at this point. However, I really just want to show the simplicity and flexibility of making great soups. With Thanksgiving and Christmas right around the corner, you have enough to do instead of worrying about a soup. This can also be done with leftover baked sweet potatoes as well. I actually bake the potatoes in advance, let them cool and toss them in the fridge. ...continue reading about Blender Baked Sweet Potato and Leek Soup Recipe...
Idea Changing Brussel Sprouts Recipe

I always say that if you don’t like a food it’s probably because you haven’t had it cooked correctly, and I believe I can change your mind about brussel sprouts. No, really. I have converted an entire family to like and to actually fight over brussel sprouts. My friend’s wife hated them; I mean HATED them. They now have them at least twice a week and their daughters fight over the crispy leaves. ...continue reading about Idea Changing Brussel Sprouts Recipe...
What do vitamins and minerals do for you?
So, I give little snippets about what foods have such-and-such vitamin and mineral and what those things do, but because people generally know what disease or illness they have up front or what they are trying to prevent I decided to list some links that give specific information. HealthCheck Systems has a quick list of vitamins and minerals although the list is a little sparse on in-depth information. I would use it as a guide to determine if you need to seek out more information. GirlsHealth.org is another site that provides a listing but this site goes a… ...continue reading about What do vitamins and minerals do for you?...
Blender Tomato-Basil and Sauteed Eggplant Soup

Today was such a beautiful day here in Austin, and I had this craving for some of my Mom’s Tomato Basil soup. My Mom used to make the best Tomato Basil soup when I was growing up. We would go out to the tomato farms that used to be west of Deerfield Beach, Florida, and we would pick baskets of tomatoes. Sadly, those farms don’t exist anymore. I’m growing tomatoes in my Square Foot Garden just so I can have some authentic tasting tomatoes. ...continue reading about Blender Tomato-Basil and Sauteed Eggplant Soup...
Vegan Miso Couscous Soup Recipe

I picked up some fresh country barley red miso at the market the other day and was really looking forward to some homemade miso soup. Cheese making got in the way (as if that’s a bad thing) so I thought about how I could quickly put together a quick, vegan soup that normal meat eaters would really enjoy. ...continue reading about Vegan Miso Couscous Soup Recipe...
